To “air-pop” popcorn in the microwave, add the popcorn kernels to a brown paper bag large enough to hold the yield. Fold down the top. Spray the bag with water (or wet your hand and tap water onto the sides and bottom of the bag). Microwave on high for 3 minutes, or use the popcorn setting if your microwave has it.
Put the pan over medium heat, pour in ½ cup popcorn kernels, stir to coat with oil and keep stirring occasionally until the kernels start to sizzle. Put the lid on the pan and nudge the dial halfway between medium and medium-high. Don't go anywhere! Soon, but not too soon, popping noises will emanate from the pot.
